Onla Dau: An ethnic Chicken Recipe of the Bodo community

        Northeast India, especially Assam is very rich in its cultural diversity. Though the Assamese language is spoken by most of the people still all the tribal communities have their own dialect. One such major communities of Assam is the Bodo community. They are the largest ethnolinguistic group of Assam. Bodo language is considered as one of the twenty-two scheduled languages of India (Source). Today I am going to prepare a very delicious, very healthy Chicken recipe of the Bodo community i.e. Onla Dau which means Chicken with rice powder.  

Let's have a look at the ingredients:
Chicken: 250 g
Rice powder: 3-4 spoons
Mustard Greens: 1 bunch
Alkali: 2-3 spoons
Potato: 1, cut into 4 equal pieces
Onion: 2: Nicely chopped
Ginger-Garlic-Chili mix: 2 spoons
Thai Coriander: 4-5 leaves
Salt and Turmeric to taste
Chicken, Jeera, Black pepper, Garam masala and red chili powder, black pepper powder

Procedure:

❤ In a bowl, mix all the masalas with salt and turmeric with some drops of mustard oil. Mix thoroughly.
❤ Marinate the chicken in the above mixture and keep it for 10-15 mins.
❤ Fry the sliced onion and ginger-garlic-chili mix until red in color.
❤ Add the chicken and fry it for 10-15 mins.
❤ When the chicken starts leaving the oil from it, add the mustard greens and fry them for 5-8 mins.
❤ Now add the alkali and mix it with the chicken thoroughly. Fry it for 3-4 mins.
❤ Mix the rice powder with a cup of water. Stair it nicely so that no lumps remain in the mixture.
❤ Add this mixture to the chicken and let it boil for 10-15 mins.
❤ Sprinkle down some fresh Thai coriander and your Onla Dau is ready to serve now.
